10 Minute Video on how to make Stuffed Peppers

 
One Stuffed Pepper is a meal by itself. You have your veggies, your grains, your herbs and your meat. This healthy and inexpensive meal takes only an hour from start to finish with each stuffed pepper costing around $2.00 each.

 

Directions: 

  1. Put 1 cup of water in small pot and bring to a boil. Then add a ½ cup or brown rice and reduce the heat to low. Cover with lid and let it simmer for 30 minutes.
  2. Start washing and cleaning your peppers. Then cut off a round hole in the top of each pepper and then take out all the seeds. Wash it again.
  3. Set up a pot of boiling water on high for softening the peppers. Let them boil on medium for 10 minutes. Take out the peppers using grilling tongs. Drain all the water from the inside and put them in a baking dish for latter.
  4. Chop onion really fine and add it to the frying pan. Start frying it on medium with a ½ teaspoon of butter or substitute spread. 
  5. Preheat the oven for 375 on bake mode.
  6. Add a pound of the ground beef to frying pan on medium heat and break it down with a cooking spoon. Keep stirring until ground beef turns into a nice brown color.
    Add some Soy sauce for a salt substitute, bread crumbs, parmesan cheese, dry parsley and basil, at your taste. At the very end add fresh garlic through the garlic presser and add really fine chopped fresh dill and scallions into the mixture. Stir it all together.
  7. Mix up a jar of spaghetti sauce with a little bit of balsamic vinegar, ketchup, dry parsley and basil. Add 3/4's of your red sauce to meat mixture.
  8. Now add your cooked rice to frying pan mixture.
  9. Now pour some of your tomato sauce mixture into the bottom of the baking dish and then add a quarter cup of water. Mix it really well.
  10. Start stuffing your peppers.
  11. Put the stuffed peppers into the baking dish with the opened side up. Decorate the peppers by putting sour cream and tomato sauce mixture on top of each pepper.
  12. Insert the peppers into the preheated oven and bake uncovered for 45 minutes.
  13. Before you start to serve let the peppers cool off first. Enjoy your stuffed peppers.
 

Main Ingredients:

5 Green Bell Peppers
1 Pound ground beef
½ cup of Brown Rice
1 jar of Spaghetti Sauce
1 Onion
2 cloves of garlic
1 Bunch Fresh dill and scallions

Other condiments at your taste:

Ketchup
Balsamic
Vinegar
Bread crumbs
Parmesan grated cheese
Dry Parsley
Dry Basil
Sour Cream
Quinoa
